    Hinsdale Chicken – White Sauce Recipe (Named for the Town in Southern Tier NY)
    • From the Kitchen of Marilyn Neff, but it’s a 70 Year Old Family recipe
    • 2-3 Packs thawed chicken cut up – any pieces work fine, the breasts are our favorite but some prefer wings or drumsticks. Any will suffice.
    • 2 cups vinegar
    • 2 eggs
    • 1 cup Oil
    • 6 tsp Salt
    • 3 tsp Poultry Seasoning
    • 2 tsp Pepper
    • This is a double recipe and the seasonings can be modified per taste as desired and substitute as per choice
    • Lightly beat the mixture before using or storing for future use
    Prep – Par boil chicken and marinate in sauce at least 2-3 hours, overnight is best. There are several Keys to success with this recipe
    • Marinate as specified for best results
    • Baste frequently with the sauce while grilling
    • Turn frequently to avoid charring. This sauce is less prone to charring on the grill than the typical red BBQ sauces, but it will char if not turned frequently.
    • Serve when chicken no longer bleeds red and enjoy! Be cautious about under cooked poultry.
